Description: Mastersmith Kevin Harvey is well known for his tremendous attention to detail -- only matched by his skill at design. This kitchen slicer from Harvey is a spectacular knife.
This utility knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter. It's perfect for a multitude of small tasks where more precise cuts are needed such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Its slightly curved belly enables it to do moderate rocking cuts. It’s nimble enough to peel an onion in hand, then slice it up in short order. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 5-1/4 inch blade was forged to shape from Kevin's san mai. A central core formed from silver steel is surrounded by outer layers of railroad track. Silver steel is a carbon steel which has 1.2% carbon. This ensures a keen, long lasting edge. By creating an off center grind, Mastersmith Harvey ensured that this slicer will exceptional food release, making it a perfect knife for slicing meats and proteins.
The handle is a classic Japanese octagonal handle. It is formed from Skunkbush burl (Rhus trilotata). Skunkbush is in the sumac family. This light toned burl wood has a tremendous swirling figure. A front ferrule is formed from African blackwood (Dalbergia melanoxylon). A thin nickel silver spacer provides a nice accent.
The knife is accompanied by a hand stitched cowhide sleeve.
