Description: Renowned Japanese knifemaker Kikuo Matsuda has been grinding blades for over 40 years and is a 5th generation knife grinder. His unique, dramatic grinds are well known throughout the knife industry. His father runs a small workshop in Seki, grinding blades for production knife makers. Kikuo joined his father's business at the age of 15 and learned grinding technique from his father. Kikuo's skill at the grinder has become legendary.
This is a traditional nakiri knife which is used by Japanese professional fisherman. Kikuo has used OU-31 rust-resistant steel for the blade. The OU-31 semi-stainless tool steel blade will have exceptional edge holding. OU-31 is a Japanese PM (powdered metallurgical) steel with micro fine crystalline structure that embodies many of the best attributes needed for knives. The steel is hardened to 64 Hrc (very hard!) and has more than 3 times the toughness of D2. It is Kikuo's preferred steel for his knives. As is common with Kikuo's knives, the thick and stout blade belies the weight and balance of the knife. This is a very rare single bevel Kiku knife. The right side is flat ground. The left side features a hollow grind. This is a technique that is used for creating sushi knives, and results in a very clean cut. The knife feels lightweight, while maintaining a durable blade and a consistent thickness all the way to just before the tip. The blade features Kikuo's unique, non-reflective disruptive acid finish. The nearly 5 and 1/2 inch single edged blade has a pronounced concave back.
A hand contoured black canvas Micarta handle is double pinned and meets up to a steel plate at the hilt area. Accompanied by a hand fitted Kydex sheath.
